Catering
In order to adhere to county and state regulations as well as prevent health and safety risks, several guidelines must be met when catering an event.
- The establishment providing food must have a valid Clark County Health Permit (if not in Clark County, a similar permit from the county in which the establishment resides).
- Any persons handling the food (from pickup, to delivery, to serving, to pack-up) must have a valid food handler’s card on their person for the duration of the catering portion of an event.
- All state and county food safety guidelines must be adhered to including but not limited to:
- Proper food temperature and time controls
- Correct handwashing and hygiene, including preparation and serving utensils
- Safe storage and date marking
All catering is subject to inspection by a member of Environmental Health and Safety, the Events Office or affiliated departments. Failure to adhere to food safety guidelines can result in repercussions to the responsible party. Failure to adhere to food safety guidelines will be met with a two-strike punishment structure.
- After the first strike, the responsible parties will be required to take food safety training provided by a designee of the Events Office.
- After the second strike, the responsible parties will be barred from serving prepared foods for the remainder of the current academic semester.
- The parties will be allowed to provide prepackaged foods (e.g. cookies, chips) for the remainder of the current academic semester.
- Critical violations will result in an immediate barring from serving prepared foods for the remainder of the current academic semester.
Bake sales and baked catering
Bake sales or baked catering events in which personal baked goods are being sold or distributed must be approved through the Events Office in advance. Only fully baked goods and goods that do not require refrigeration are allowed. Additionally, the following criteria must be met in every case:
- Every effort to maintain good hygiene should be used
- All goods need to be individually packaged before distribution.
- Post a sign including the ingredients used in the baked goods
- Post a sign stating “the goods were not prepared in a Health Department-inspected kitchen”
Cooking food on campus
There are many nuances when it comes to serving and/or preparing food, and Washington State University aims to adhere to state and county regulations regarding food safety. If you wish to cook or prepare food on campus, reach out to the Events Office or the Environmental Health and Safety Office no later than 30 business days before your event. See the Food Service Standard Operating Procedure for more information regarding cooking food on campus.
